Hi, I'm Paulo.
I'm an Amsterdam-based pastry chef and baker — and Chunks is my way of sharing the things I love most: honest flavours, creative combinations, and food made with real care.
I bake slowly. Paying attention. Letting each batch take the time it needs. That's not a marketing line — it's genuinely how I work, and it's what you taste when you bite into a Chunks babka or pull apart a slice of banana bread.
Chunks started as custom pastry boxes and grew into a regular presence at Footnote Coffee in De Pijp, where you can find retail slices most days. I also do wholesale for cafés and corporate custom orders — get in touch if that's you.
The philosophy
People always ask what makes the cookies so special. Is it the butter? The chocolate? A secret recipe?
"The secret ingredient isn't something you can measure or buy. It's the time I give them. The care. The intention behind every batch."
Baking, for Paulo, is about connection — a pause in the day, something made to be shared. Whether it's a casual Saturday babka at the café or a custom box for your team, every Chunks bake is made with that intention.

Loaves & breads
Banana bread, lemon poppy seed loaf — vegan, moist, and packed with flavour.
Babkas & pastries
Chocolate and cardamom babka buns — swirled, yeast-raised, and completely irresistible.
Cakes & desserts
Basque burnt cheesecake, ube tiramisu — showstoppers for any occasion. Gluten-free options included.
Where to find us
Retail slices are available at Footnote Coffee in De Pijp — one of Amsterdam's favourite neighbourhood cafés. Drop in for a slice and a coffee.
